Our honey

Honey is a fascinating natural product that is produced by honey bees through a complex process. Honey consists mainly of sugar and is therefore a popular food: whether as a spread, for enhancing desserts, or as an addition to tea – honey is an indispensable item in almost every household. On this page, we would like to explain the exciting production process of honey, its significance for our nature, and give you an initial insight into our honey assortment.

The Production Process of Honey

Gathering
The production begins when forager bees collect nectar from flowers or honeydew from trees. These industrious insects can visit up to 1,000 flowers per day to store the sweet juice in their honey stomachs.

In the Hive
Back in the hive, forager bees pass the nectar to house bees. These bees further process the nectar by adding their own enzymes, which later make the honey so valuable. Through repeated passing of the nectar between the bees and storage in open wax cells, excess water evaporates.

Ripening and Harvesting
Once the honey reaches the appropriate moisture content, the bees seal the wax cells. The beekeeper harvests the ripe honey by removing the frames from the hive and extracting the honey.

Composition and Properties
Honey mainly consists of various types of sugars and water. Only 3-4% comprises valuable components such as amino acids, proteins, enzymes, vitamins, and minerals.

Meaning for Humans and Nature

Honey is not only a popular food item but also plays a crucial role in the ecosystem. Through the pollination work of bees, they contribute to the preservation of numerous plant species, thus ensuring biological diversity.

For humans, honey is not only a sweetener but also holds a firm place in folk medicine due to its antibacterial and anti-inflammatory properties.

Honey Gardens and Varieties

There is a wide variety of honey types that differ in flavor, color, and consistency. The botanical origin of the nectar significantly determines the characteristics of the honey. Well-known types include blossom honey, forest honey, varietal honeys such as acacia honey or linden honey, as well as manuka honey.

Manuka honey from New Zealand

Enjoy the taste of the New Zealand tea tree!

From the mountains and valleys of New Zealand's Wairarapa region, we bring you this honey! In the rugged, steep slopes of the coastal ranges, the South Sea myrtle shrubs, known in the Māori language as Mānuka, grow. Honey bees collect nectar from the white blossoms, which contains a concentrated amount of the Mānuka shrub's properties. Handpicked directly from the beekeeper in New Zealand, this honey is selected according to strict criteria.

The purity and pollutant-free nature of the Mānuka (based on pollen count) are our top priorities. The Methylglyoxal concentration (MGO) of our Mānuka honey is certified by two independent laboratories in New Zealand and Germany, ensuring a double authentication of our Mānuka honey. Only in this way can the quality meet our high standards for natural honey, which has been valued in many cultures for thousands of years and is now appreciated here as well. Look forward to a creamy, honey-like aroma with a fruity and pleasantly earthy aftertaste.
