This creation was inspired by the Iranian Yalda festival for the winter solstice, which symbolises the victory of light over darkness as the days grow longer again. And so the last fruits of summer, such as the fruity, tangy pomegranate, are eaten to celebrate the arrival of winter. We have added spices such as cinnamon and cloves to the blend to give it a warm, wintery touch.
