Honey is a fascinating natural product produced by honeybees in a complex
process. Honey is mainly made up of sugar, which is why it is such a popular
food: as a spread on bread, to enhance desserts or as an addition to tea, it is
hard to imagine a household without honey. On this page, we would like to
explain the exciting process of honey production, its importance to nature and

The Production Process of Honey
Honey Collection
Production begins when forager bees
collect nectar from flowers or honeydew from trees. These industrious insects
can visit up to 1,000 flowers a day to store the sweet sap in their honey
stomachs.
The Beehive
Back in the hive, the forager
bees transfer the nectar to the hive bees. These process the nectar further by
adding their own enzymes to it, which later make the honey so valuable. By
repeatedly passing the nectar between the bees and storing it in open honeycomb
cells, excess water evaporates.
Ripening and
Harvest
As soon as the honey has reached the right level of
moisture, the bees seal the honeycomb cells with wax. The beekeeper harvests the
ripe honey by removing the combs from the hive and spinning
them.
Composition and Characteristics
Honey mainly
consists of different varieties of sugar and water. The valuable ingredients
such as amino acids, proteins, enzymes, vitamins and minerals only make up about
3-4%.
Honey types and varieties
There is a wide variety of honey types that differ in taste, colour and
consistency. The botanical origin of the nectar largely determines the
properties of the honey. Well-known varieties include blossom honey, forest
honey, varietal honeys such as acacia honey or lime honey and manuka
honey.
