The tea makers from the Hatidubi Tea Factory located in the Golagath District have surprised us with a very well turned out experiment: perhaps Assam’s first real smoky tea! "Fu Soonga" is a very popular Assamese type of cooking for which young, green bamboo canes are filled with yoghurt or other foods and then prepared over the open flame or on hot plates. "Fu" means to blow and "Soonga" means cane. The tea maker’s idea was to blow smoke from wild timber through these bamboo canes on the tea leaves during their production. The result definitely must be tried: a smooth and aromatic Assam with light, well-balanced notes of smoky nuances.
The cooperative "Jasbire Tea", founded by several small-scale farmers in 2015, aims to sustainably produce exceptional teas and thereby secure the long-term livelihoods of over 150 households in the Ilam region. The quality offered to us here was cultivated and produced at altitudes ranging from 1,400 meters to 2,100 meters. The lightly shiny, beautifully twisted leaves feature a few leaf tips, the infusion glimmers slightly reddish and smells wonderfully malty. In terms of taste, exquisite notes of cocoa and dark chocolate emerge, lingering on the palate for a long time. A truly fascinating tea!
This creation received its name for a reason: we have fallen in love all over again with the taste of gooseberry and currants on a mild black tea base. We are just as delighted by both of these berries nowadays as we were as kids and children today are just as fascinated by them as we were then. Refreshingly tangy and crisp, yesteryear’s memories put a smile on your face with today’s berries. Some things will never diminish in value!
Once around the world… This is how the intensively fruity flavours of local plums can be united with spicy saffron inspired by the international Levant cuisine. Slightly nutty quinoa flakes round off this taste excursion by taking a detour to the world of the Inca. A taste combination which will make dreams come true.
