Que ce soit comme moyen de paiement, comme cadeau noble ou pour faciliter le transport, le pressage du thé a connu de nombreux usages depuis la dynastie Han. À l'origine, le thé était pressé directement après la récolte et mûrissait sous cette forme, mais un autre type de traitement s'est rapidement imposé. À l'époque, on parlait de "maturation artificielle", mais de nos jours, le terme "post-fermentation" est beaucoup plus courant. Le thé déjà entièrement fermenté, appelé "Shou" = mûr, est humidifié, pressé en une galette et peut ainsi mûrir une seconde fois. Ce thé a un goût classiquement doux et terreux et peut tolérer jusqu'à cinq infusions.

The basis of this black tea from Yakushima is the cultivar Asatsuyu (in English: morning dew), also called “natural Gyokuro”, since it achieves the typical umami taste of Gyokuro even without shading time. Due to its rather high susceptibility to frost and a lower yield than, for example, Yabukita, this cultivar is very rarely used - thus making it a real rarity! The leaves remind one somewhat of very high-quality Keemun teas from China, being deep black and very carefully worked. A very rich aroma unfolds in the cup, bringing with it a sweetness that is rarely found in black teas.
