Chai Tea Cookies (Vegan)

Ingredients: (vegan)

  • 150 g vegan margarine
  • 150 g brown cane sugar
  • 2 ripe bananas
  • 2 heaped spoons Chai Tea
    (e. g. Black Chai, Art. 22392)
  • 1 packet baking powder
  • 400 g spelt flour
  • 100 ml Soy milk

Preparation:

Beat the margarine with the sugar using a hand mixer until creamy. Cut the bananas into small pieces and mix them into the cream. Mix the flour with the baking powder in a separate bowl. Now place two heaped spoons of Chai tea into the blender or coffee grinder and grind it finely. Alternatively, you can use a mortar to grind the tea and then remove the bigger pieces. Mix the tea powder into the flour and then add the flour to the margarine-banana cream a little at a time. Now add the soya milk and mix the pastry until it is creamy. Let the mixture rest in the fridge for two hours.

Preheat the oven to 180° C. Using two teaspoons form the biscuits and place them on a greased baking tray or sheet leaving some space between the biscuits, as they will rise. Bake the biscuits for 15 to 20 minutes or until they are light brown.
