Matcha
Matcha
is a very exclusive tea specialty. Very few tea farmers have the knowledge
required for the gentle and complex processing of this tea. The shrubs normally
grow on shady hillsides or are otherwise shaded with cloths for a certain
period before the harvest begins. This process increases the amount of
chlorophyll in the leaves. The result is an intense green tea, which is ground
to powder after drying.
The
Japanese Tea Ceremony traditionally uses green Matcha powder. Unlike other
teas, Matcha is put directly into the drinking bowl and frothed up with a
bamboo whisk so that the whole portion of tea remains in the brew, thus
rendering the valuable constituents available in concentrated proportions.
Nowadays Matcha is popular throughout the
western world, and its well-loved characteristics much appreciated. Modern
lifestyle cuisine has already adopted Matcha as a precious
ingredient.
