Crumble Candy

As opposed to cube candy, crumble candy is formed in large crystallisation containers which are filled with a sugar solution. The hot sugar solution is poured into a basin which has several compartments. During the cooling, the candy sticks to the walls of the basin as a thick crust. After the crystallisation process is over, the rest of the syrup is drained and the basins are left untouched for some time so that they can dry. The candy plates which can become up to 15 cm thick, are pried out, broken into smaller pieces and sorted according to their size as well as packed. The larger pieces in their uneven form are called crust candy while the smaller bits are called crumble candy.
