Cocoa
The
organically cultivated bean of the Criollo tree (“The Noble”), which is
only harvested in limited amounts and is of exceptional quality, forms
the basis of our premium cocoa. This tree is highly sensitive and
requires attentive care from experienced workers. During its
processing, the cocoa is less degreased than common cocoa varieties and
still contains approximately 20% cocoa butter (compared to 10% in
common cocoa). Hence, its taste is much richer and creamier. The result
is a gourmet cocoa with a deliciously warm character and the promise of
a unique taste experience.
Preparation of Cocoa:
Quick: heat 250 ml of milk, put approximately 4–5 teaspoons of cocoa
in a cup and stir in some of the hot milk, then add the rest of the
milk. Traditional: heat milk, add cocoa powder and stir with a whisk,
let simmer for a few minutes. Light: replace half of the milk by water.
Generally valid: add sugar according to taste, for added creaminess add
cream or crème fraîche.
