Not only a difference in colour: White, Yellow and Green
Teas
Green and white tea is produced not only in China or Japan;
yellow tea is cultivated in China only.
The general difference between white
and yellow tea is the production process: white tea ferments only a bit during
the wilting process, whereas yellow tea ferments briefly with dry heat.
The
Chinese white tea is produced from special plants in the province of Fujian,
while the small varieties of yellow tea are cultivated in the provinces of
Yunnan and Guangdong.
In Japan, tea is not fermented. Right after the arrival
in the tea factory, the leaves are steamed in order to stop oxidation by the
natural enzymes present in the leaves and to fix the green colour. According to
the quality, the leaves are either hand- or machine-rolled afterwards.
Unlike
in Japan, Chinese tea gardens do not use steam in their traditional green tea
production. The deactivation of the enzymes, which are in charge of the
fermentation process, is reached by a short roasting (pan-fired
tea).
